Peanut Butter Chocolate Chip Cookies

Whoever came up with the combination of chocolate and peanut butter needs to be inducted into the Hall of Fame.  This is one of those classic flavor combinations that is truly all-American and very popular with the generations. In fact, I think that it is one of my favorites.  It's hard to beat a peanut butter cup during Easter and Halloween. Peanut Butter Chocolate Chip Cookies For those of us who can't get enough of that favored duo, this recipe is for you. The cookie is tender, light, sweet, full of that peanut butter flavor we all love in a cookie, plus it has the added bonus of chocolate chips.  What could be better? Take a moment to click on the printable recipe below.  Go over the ingredients and locate them in your pantry, and start baking.  This is the kind of recipe that is easily done on a lazy weekend morning or afternoon.  If your kids can partake of peanuts, make sure that you keep plenty of these in the cookie jar.  Everyone...

Funfetti Cookies

Funfetti cookies will brighten anyone's day because of their cheerful colors. Chockfull of rainbow-colored sprinkles, these generously-proportioned sugar cookies can stand in for bake sales, family gatherings and for the cookie jar all year round.  Not only do the funfettis have a good texture and great flavor, they're also very easy to make. While searching for funfetti cookie recipes, I realized that I already had a perfect one on the blog from several years ago.  Think of this as a reinterpretation of that recipe.  The only major difference is, of course, the sprinkles.   Let's get started! Click here for a printable recipe Once the cookie dough is done, I like to add the sprinkles by hand rather than letting the mixer do it.  Otherwise, you may find the jimmies breaking down too much and leaving rainbow dust in the dough, rather than whole sprinkles. P.S.  The recipe is easily doubled if you want to make lots of them. O...

Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip Cookies are very appropriate this time of year, because it’s nice to have the combination of flavors of pumpkin, spice and chocolate, all in one bite.  The cookies can be savored with a cup of coffee, a glass of cold milk or a warm cup of tea.  Don’t hesitate for one moment to try a batch of my cookies this season, because they are exceptionally good. Soft, cakey and irresistibly tasty, I have a feeling that you won’t be able to eat just one of these sweet morsels.  The spiciness of a rich pumpkin bread and the unmistakable flavor of a good chocolate chip cookie will have you making this recipe several times throughout the season.  The only problem that I can think of is that the tender cookies stick to one another when transferred into cookie jars, but a few pieces of parchment paper between cookies will keep them from fastening onto one another.   Whether you make your own pumpkin puree using those delicious sugar pumpkins...

Nutella Brownie Cookies

Imagine a cookie that is soft, delicate and cakey made with the best semisweet chocolate and the creamiest Nutella chocolate spread.  A rich blend of hazelnuts and chocolate, Nutella seems to be one of those food items found in everyone's pantry these days; some of my friends & family swear it's a separate food group.  This particular chocolate cookie is a delicious brownie batter dropped onto cookie sheets with an ice cream scoop, which is then baked to perfection.  Nutella is added to the recipe for a boost in flavor, in addition to being spread onto the tops of the finished cookies once they've cooled.  For chocoholics everywhere, my  Nutella Brownie Cookies  are a joy to eat and they're the type of treat you'll want to reward yourself with whenever the craving for chocolate beckons.  Other than the rich, delicious flavor of a good quality semisweet chocolate (imported or domestic), I love how quickly and easily these cookies come ...

Pumpkin Oatmeal Raisin Cookies

A tasty addition to the lineup of Fall cookies which call for spice, Pumpkin Oatmeal Raisin Cookies are great for those who don’t want pie at the holiday table.  One comes across pumpkin everything this time of year and I for one, love it.  Whether it's pumpkin bread, pumpkin pies, pumpkin hand pies or custards, I'll always try a dessert made with this autumnal squash.  I feel like Fall isn't the same without a bit of pumpkin and spice. If you happen to like pumpkin sweets then you're in luck, because my version of oatmeal cookies will have you reaching for them as soon as the first sheet comes out of the oven.  The wholesome ingredients of whole wheat flour, oats, raisins, butter and pumpkin puree come together quickly and, if truth be told, one can easily make a batch without a stand mixer.  A large bowl, a heavy wooden spoon and lots of strength will get through this recipe in no time.   Go through your pantry and make sure you have everythi...

An October to Remember

So much happened this past month for me, my family and here on the blog.  As a blogger it's rather interesting to look back at what was covered & written about for any given time span, because it helps one focus on the future.  A couple of things that I'm very proud of occurred during the month and it's nice knowing there is a large amount of support from well wishers throughout the world.  I thank all of you! I began October with the M&M cookies that I had been meaning to get to for a couple of years after someone requested them.  Thinking about the different ways to make those particular cookies like the ones found at local bakeries, I finally came up with a foolproof method for keeping the candy-coated chocolates from becoming broken bits.  It's not that difficult to produce scrumptious cookies that kids of all ages adore.  Look at the post for the complete how-to.  Oh, don't forget, there is also a nice Rice Krispie pop treat that...
