Sour Cherry Hand Pies

Every year, toward the end of June, I scour the farmers markets for sour cherries.  These incredibly delicious fruits have such a narrow window of opportunity at the market, that I waste no time in buying some whenever I spot them.  My favorite Amish farmstand near my home brings them in during the last two weeks of June.   Sour cherries fresh from the farmstand. Summer Entertaining Favorites

Summer is a great time to entertain.  Everyone likes to have company over at least once or twice during the season, so that one can share good food, lots of laughs and the best of the best.  I'm all for going to the farmers market every single week to pick up the most colorful, juiciest and flavorful fruits & vegetables for us to feast on here at home, but if I happen to be harvesting summer berries or other fruits from the property, even better.  Should I have company over for an afternoon luncheon or dinner, then I make an extra effort to bake a pie or a cake and pick the most flavorful meat for burgers or perhaps some Maryland blue crab for savory crab cakes, if I'm in the mood for them (this is most often the case during summertime).  After I choose a main course and at least one dessert, then everything else falls into place.  The dinnerware, flatware and glassware can be dressed up or down depending on the ambience I want to create. Pumpkin Hand Pies

Pumpkin hand pies are an easy alternative to the more traditional pies for Thanksgiving.  Growing up, mom would begin her pie baking as soon as Halloween came to an end and she would spoil us with mini pumpkin hand pies that were baked by the dozen.  Tucked into a Pyrex bowl covered with a towel, my brothers and I would steal them when she wasn't looking. Actually, I think she knew what we were up to, but since these were handmade with all-natural ingredients, mom didn't care how many we gobbled up. The Best Pie Crust

What is your idea of a good pie crust?  Some say it is one which is so flaky and tender that it shatters into numerous shards of delicate pastry when you cut into it.  Others may tell you that a good pie crust must have the unmistakable flavor of butter in order to be delicious.  For me, a good tart or pie crust must possess all of these essential qualities in order to meet with my approval for baking.  The good thing about pie crusts made from scratch is that they are not difficult in the least to prepare.  There is no need to settle for store bought once you've mastered the basics of pie crusts.
