I love baking cakes, eating cakes & experimenting with cakes. Sifting & measuring the finest of flours, creaming sweet butter, cracking the freshest eggs from the farmer's market and using only pure cane sugar, are just some of the components that go into baking the cakes I love. Every single year I bake cakes for several people and although I get requests for certain ones every time, I still like to tweak & change flavors, recipes and icings. Chocolate is big with a lot of people, but so is lemon.
I'm not sure I've ever come across a type of cake I disliked (except for stale cakes!). From dense pound cakes & traditionally flavored butter cakes, to light angel food cakes & very moist chiffon cakes, I will try just about anything. If I'm baking a cake for someone, I usually ask if they have any preferences or dislikes. Most people tend to be open-minded when it comes to cakes, but at times, I do encounter people who will be adamant that they only like this type or that kind of flavor. Personally, I love the fearless, intrepid cake eater.
You know you're in the presence of such people when the cake is brought out to the table after lunch or dinner. Eyes sparkle & zero in on the dessert sitting proudly on a cake stand or cake plate; everyone wonders, how much do I allow myself? Will I be given seconds if I want more? As a baker, nothing gives me greater pleasure than seeing an empty plate when all is said and done. If there is leftover cake, the guest of honor gets to take it home.

By the time I publish this, I will be in my kitchen making a very important layer cake for a dear family member. I've been going back & forth between the cake itself and the filling that will complement it, not to mention the icing that will get devoured by all. There are a few recipes I want to try, but quite honestly I want to experiment & come up with my very own. I spend most of my time in the kitchen, cooking and baking, some professionally, but mostly for me personally. Love trying new recipes! I look forward to your posts and recipes and helpful home hints. I was inspired by one of your previous posts to get serious with my fire extinguishers.
